USDA Pork

Our pastured and pasture-raised pigs spend their days foraging on pastures and in our woodlots while living their best and happiest lives.

How It Works

Our USDA pork comes in individual retail cuts and is available year-round. If you don’t have the storage capacity for larger cuts of pork, USDA cuts are the best option for you. We offer everything from pork chops to pork shoulders, and pork legs to tenderloin.

Options & Specifications

We raise a crossbreed of Yorkshire pigs (your classic “pink” pig) and Hampshire pigs (black and white).

Hogs are supplemented with non-medicated grain, and except for in the case of medical necessity, no medicines or antibiotics are given to them.

Frequently Asked Questions

Is pork considered red meat?

Yes, pork is classified as red meat. Some people think because it sometimes becomes lighter in color after cooking that it is “the other white meat.” This is incorrect. Pork is not considered white meat.

Is it safe to eat pork medium-rare?

Pork can now be safely eaten when served medium rare, or 'pink'. This is achieved when an internal cooking thermometer reaches 145 °F in the thickest part, and then the meat is left to rest for 3 minutes after cooking.

What is the red liquid that appears when I cook my pork?

The redness of the meat is called myoglobin. It is not blood. Our pork chops are much redder in color due to the animal exercising and moving as opposed to being confined. Pasture-raised pork from heritage breeds looks like a beefsteak in color.

Where can I pick up my order?

You have a few options to find a pick up location that is the most convenient for you.

To pick up your order through our farm, you can schedule a time here.

Through Farm Drop, you can get your order picked up in Attica, Nunda, and Linwood/Batavia.

You can also find our USDA products in Valley Bread & Bounty in downtown Fillmore, which is only minutes from Letchworth State Park and Rushford Lake.

How will my order be packaged?

Our USDA products are vacuum sealed, similar to what you would find in a grocery store.

What cuts do you offer?

We offer all the cuts you would see behind the deli counter. Whether you want sausage, chops, or roasts, we have you covered.

I want to buy a large supply at a discount, but not an entire hog. What are my options?
